Combine chicken wings and drumsticks with olive oil, smoked paprika, garlic powder, dried thyme, salt, and black pepper in a large bowl. Toss thoroughly and allow to marinate for at least 20 minutes.

In a separate bowl, mix pork with soy sauce, olive oil, Dijon mustard, honey, salt, and black pepper. Cover and refrigerate for at least 30 minutes when possible.

Place whole potatoes in a pot of boiling water and cook for 10–12 minutes until just tender. Drain, then cut into halves or quarters. Toss with olive oil, salt, and rosemary or thyme.

Preheat a grill or a grill pan over medium-high heat. Grill marinated chicken wings and drumsticks, turning occasionally, for 25–30 minutes until well browned and cooked through.

Place marinated pork on the grill and cook for 4–5 minutes per side until golden and juicy. Remove from the grill and allow to rest for several minutes before slicing.

Arrange the prepared potatoes, cut side down, on the grill. Cook for 5–7 minutes until crisped and attractively charred.

Arrange grilled potatoes in one section of a serving box or dish. Stack wings and drumsticks neatly, then add slices of grilled pork alongside. If desired, include a sauce such as garlic aioli or BBQ in a small container.
