In a mixing bowl, thoroughly blend softened cream cheese, shredded cheddar, eggs, minced chipotle peppers, adobo sauce, green onion, salt, and pepper until smooth and slightly thickened.

Encase each sausage slice with half a bacon strip to form a cup shape, securing seam with a toothpick.

Distribute approximately 1 tablespoon of chipotle egg mixture into each prepared bacon cup using a spoon or piping bag.

Bake in preheated oven for 25–30 minutes, or until bacon is crisped, filling is puffed and golden, and centers are set. For additional browning, broil for 1–2 minutes if desired.
