# What You'll Need:

→ Base

01 - 6 slices thick-cut bacon, cut in half
02 - 12 slices thick smoked sausage or kielbasa, approximately 1.25 cm thick

→ Filling

03 - 120 grams cream cheese, softened
04 - 60 grams shredded cheddar cheese
05 - 2 large eggs
06 - 1 to 2 chipotle peppers in adobo, finely minced
07 - 15 milliliters adobo sauce
08 - 1 green onion, finely chopped
09 - Salt, to taste
10 - Freshly ground black pepper, to taste

→ Topping (optional)

11 - Chopped fresh cilantro
12 - Extra shredded cheese

# Steps To Follow:

01 - Preheat oven to 200°C and line a baking sheet with parchment paper or place a wire rack on top for efficient crisping.
02 - In a mixing bowl, thoroughly blend softened cream cheese, shredded cheddar, eggs, minced chipotle peppers, adobo sauce, green onion, salt, and pepper until smooth and slightly thickened.
03 - Encase each sausage slice with half a bacon strip to form a cup shape, securing seam with a toothpick.
04 - Distribute approximately 1 tablespoon of chipotle egg mixture into each prepared bacon cup using a spoon or piping bag.
05 - Bake in preheated oven for 25–30 minutes, or until bacon is crisped, filling is puffed and golden, and centers are set. For additional browning, broil for 1–2 minutes if desired.
06 - Allow to cool slightly before serving. Top with extra cheese, herbs, or a dollop of sour cream as desired.
