Lemon Chia Seed Pudding (Printable Version)

# What You'll Need:

01 - 250 ml unsweetened almond milk
02 - 3 tablespoons chia seeds
03 - 1 teaspoon freshly grated lemon zest
04 - 1 tablespoon fresh lemon juice
05 - 1 teaspoon honey or pure maple syrup
06 - 0.5 teaspoon pure vanilla extract

→ Optional Toppings

07 - 60 g fresh berries (blueberries, raspberries, or sliced strawberries)
08 - 1 tablespoon sliced almonds or walnuts, unsalted

# Steps To Follow:

01 - In a medium bowl or mason jar, whisk together almond milk, chia seeds, lemon zest, lemon juice, honey or maple syrup, and vanilla extract until thoroughly incorporated.
02 - Cover and refrigerate for a minimum of 2 hours or preferably overnight, stirring occasionally during the first hour to prevent seeds from clumping.
03 - Stir the pudding well before serving to achieve a creamy consistency, then divide equally between two serving glasses or bowls.
04 - Garnish each portion with fresh berries and a sprinkle of sliced almonds or walnuts for added texture and colour.
