Pan-seared cod finished with fresh herbs and butter, creating a vibrant and mouthwatering dish.

# What You'll Need:

→ Fish

01 - 4 cod fillets (150–200g each)

→ Herb Butter Sauce

02 - 3 tablespoons unsalted butter
03 - 2 cloves garlic, finely minced
04 - 2 tablespoons fresh parsley, chopped
05 - 1 tablespoon fresh dill, chopped
06 - 1 teaspoon fresh thyme leaves or 0.5 teaspoon dried thyme
07 - Juice of half a lemon
08 - Salt, to taste
09 - Black pepper, to taste

→ For Cooking

10 - 1 tablespoon olive oil

# Steps To Follow:

01 - Pat fillets thoroughly with paper towels to remove excess moisture. Season both sides evenly with salt and black pepper.
02 - Heat olive oil in a large skillet over medium-high heat. Place cod fillets in the pan and sear for 3 to 4 minutes per side, cooking until golden on the surface and fish flakes easily when tested with a fork. Remove and keep warm.
03 - Lower heat to medium. In the same skillet, melt butter. Stir in minced garlic and sauté for 1 minute until fragrant. Add chopped parsley, dill, thyme, and lemon juice, stirring to combine. Simmer the sauce for 1 to 2 minutes to bring flavours together.
04 - Return cod fillets to the skillet. Spoon warm herb butter sauce over fish. Allow to simmer for 1 additional minute to heat through. Serve immediately, optionally garnished with extra herbs and a wedge of lemon.

# Notes and Tips:

01 - For optimal flavour, use fresh herbs and high-quality butter for the sauce.
02 - Resting the cod on paper towels prior to cooking ensures a crisp, golden crust.
03 - This dish pairs well with steamed broccoli, roasted baby potatoes, or aromatic rice pilaf.
04 - A dry, chilled Sauvignon Blanc makes an excellent pairing.
