01 - 2 boneless, skinless chicken breasts, diced (alternatively, use chicken thighs)
02 - 1 cup long-grain white rice
03 - 2.5 cups chicken broth
04 - 2 tablespoons olive oil

05 - 1 bell pepper, diced (any colour)
06 - 1 small onion, diced
07 - 2 garlic cloves, minced

08 - 1 tablespoon Cajun seasoning (store-bought or homemade)
09 - 0.5 teaspoon paprika (optional, for added smokiness)
10 - Salt, to taste
11 - Ground black pepper, to taste

# Steps To Follow:

01 - Toss diced chicken with Cajun seasoning, salt, pepper, and paprika until evenly coated.
02 - In a large skillet or pot, heat olive oil over medium-high heat. Add chicken and sear for 3–4 minutes until lightly browned. Remove chicken and set aside.
03 - In the same pan, add extra olive oil if necessary. Sauté onion and bell pepper for 3–4 minutes, until soft. Add minced garlic and cook for an additional minute.
04 - Stir in the rice and toast for 1 minute. Pour in the chicken broth and bring to a gentle simmer.
05 - Return browned chicken to the pan. Cover, lower heat to a gentle simmer, and cook for 18–20 minutes until the rice is tender and most liquid is absorbed.
06 - Fluff rice with a fork and adjust seasoning if needed. Serve hot, garnished with chopped parsley or green onion as desired.
