Wash all produce thoroughly. Peel carrots and beetroot. Chop carrots, beetroot, and pineapple into chunks suitable for blending or juicing.

For a juicer: Process carrots, beetroot, spinach, and pineapple. For a blender: Combine all produce, lemon juice if using, and 120 ml water. Blend until smooth. For a clear juice, strain through a fine mesh sieve or cheesecloth.

Pour juice into chilled glasses or a carafe. Add ice cubes as desired. Garnish with a slice of beetroot, pineapple, or carrot stick if preferred.
