Baked Sweet Potato Goat Cheese (Printable Version)

Sweet potatoes, goat cheese, walnuts, and honey combine for a simple, flavorful dish with minimal prep.

# What You'll Need:

01 - 2 medium orange-fleshed sweet potatoes
02 - 60 ml soft goat cheese, at room temperature
03 - 30 g walnuts, chopped and lightly toasted
04 - 15–30 ml honey, for drizzling
05 - Olive oil, for roasting
06 - Salt, to taste
07 - Freshly ground black pepper, to taste
08 - Fresh thyme leaves or microgreens, for garnish (optional)

# Steps To Follow:

01 - Preheat the oven to 200°C. Wash sweet potatoes and pierce each several times with a fork. Rub with olive oil and a pinch of salt. Arrange directly on the oven rack or a foil-lined tray. Roast for 40 to 45 minutes, until tender and the skin begins to caramelise.
02 - While the sweet potatoes roast, toast the chopped walnuts in a dry skillet over medium heat for 2–3 minutes, stirring frequently, until fragrant. Allow goat cheese to sit at room temperature for easier spreading.
03 - Slice roasted sweet potatoes open lengthwise without cutting through completely. Gently fluff the inside with a fork. Spread a generous amount of goat cheese over each. Sprinkle with toasted walnuts and drizzle with honey. Finish with cracked black pepper and garnish with thyme leaves or microgreens if desired.
