Sun-Dried Tomato Basil Chicken Pasta (Printable Version)

# What You'll Need:

→ For the Chicken

01 - 2 boneless, skinless chicken breasts or thighs
02 - 1 tbsp olive oil
03 - 1/2 tsp garlic powder
04 - 1/2 tsp Italian seasoning
05 - Salt and black pepper to taste

→ For the Sauce

06 - 2-3 tbsp chopped sun-dried tomatoes in oil
07 - 3 garlic cloves, minced
08 - 1/2 cup chicken broth or pasta water
09 - 1/2 cup heavy cream or coconut cream
10 - 1/4 cup grated Parmesan cheese
11 - 1 tsp red chili flakes (optional)
12 - 1 cup baby spinach (optional)
13 - 1/4 cup fresh basil leaves, chopped or torn

→ For the Pasta

14 - 250g (8-9 oz) short pasta (penne, fusilli, or farfalle)
15 - Salted water for boiling

# Steps To Follow:

01 - Boil the pasta in salted water according to package instructions. Reserve 1/2 cup of the pasta water, then drain and set aside.
02 - Season the chicken with garlic powder, Italian herbs, salt, and pepper. In a skillet, heat olive oil over medium heat. Cook the chicken for 5-6 minutes per side until golden and fully cooked. Let rest for 5 minutes, then slice or chop into pieces.
03 - In the same skillet, sauté the garlic and chopped sun-dried tomatoes in 1 tbsp of their oil. Add the chicken broth or pasta water and let simmer for 1-2 minutes. Add the cream and Parmesan cheese. Let simmer until slightly thickened. Stir in spinach (if using) and let wilt. Add the basil and cooked pasta, tossing to coat well.
04 - Return the chicken slices to the skillet and mix with the pasta. Season with salt, pepper, and chili flakes if desired. Top with extra Parmesan and fresh basil if preferred.
