01 - 6 thick-cut bacon slices, halved crosswise
02 - 12 thick slices of kielbasa or smoked sausage (approximately 1.5 cm thick each)

03 - 120 grams cream cheese, softened
04 - 60 grams shredded cheddar cheese
05 - 2 large eggs
06 - 1–2 chipotle peppers in adobo, minced
07 - 1 tablespoon adobo sauce
08 - 1 green onion, finely chopped
09 - Salt to taste
10 - Ground black pepper to taste

11 - Fresh chopped cilantro
12 - Additional shredded cheese
13 - Sour cream

# Steps To Follow:

01 - Preheat the oven to 200°C. Line a baking sheet with parchment paper or fit with a wire rack for even roasting.
02 - In a medium bowl, thoroughly mix the cream cheese, shredded cheddar, eggs, minced chipotle peppers, adobo sauce, green onion, salt, and pepper until the mixture is smooth and cohesive.
03 - Wrap each bacon half around a sausage slice to create a cup shape. Secure the seam with a toothpick to maintain structure during baking.
04 - Spoon approximately 1 tablespoon of the chipotle egg mixture into each bacon-wrapped sausage cup. Arrange the filled cups upright on the prepared baking tray.
05 - Bake in the preheated oven for 25–30 minutes, or until the bacon is golden and crisp, the filling is puffed and set, and the centers are cooked through. For deeper browning, broil an additional 1–2 minutes, monitoring carefully.
06 - Allow to cool briefly before serving. Garnish with extra cheddar, cilantro, or a spoonful of sour cream if desired.
