01 - 1 block (approx. 225 g) halloumi cheese, sliced
02 - 1 red bell pepper, chopped
03 - 1 zucchini, chopped
04 - 1 small red onion, thinly sliced
05 - 1 garlic clove, minced
06 - 1 can (400 g) chopped tomatoes
07 - 1 teaspoon smoked paprika
08 - 0.5 teaspoon chili flakes (optional)
09 - 2 tablespoons olive oil
10 - Salt and freshly ground black pepper, to taste

11 - Fresh parsley, finely chopped, for garnish

# Steps To Follow:

01 - Set the oven to 200°C (390°F) and allow it to preheat while preparing the vegetables.
02 - In a large bowl, combine the chopped bell pepper, zucchini, red onion, and minced garlic. Drizzle with olive oil, add the smoked paprika, salt, and pepper, then toss thoroughly to coat.
03 - Transfer the seasoned vegetables into a suitable baking dish. Pour the chopped tomatoes evenly over the vegetables.
04 - Arrange the halloumi slices in a single layer over the top of the vegetables. Sprinkle with chili flakes if desired.
05 - Place the dish in the oven and bake for 25–30 minutes, or until the vegetables are tender and the halloumi is golden brown at the edges.
06 - Remove from the oven and scatter with freshly chopped parsley. Serve hot.
