In a large bowl, combine warm water, sugar, and active dry yeast. Allow to sit for 5 minutes until the mixture becomes foamy.

Add flour, salt, and olive oil to the yeast mixture. Stir to combine, then knead on a floured surface for 8 to 10 minutes until smooth and elastic.

Transfer dough to a lightly oiled bowl, cover, and let rise in a warm area for 1 hour or until doubled in size.

Preheat oven to 245°C (475°F). If using a pizza stone, place it in the oven to preheat.

On a floured surface, roll the dough into a 36–40 cm round. Transfer to a pizza pan or hot stone.

Spread pizza sauce evenly over the dough. Scatter mozzarella cheese over the sauce, followed by the cooked sausage. Sprinkle with oregano and crushed red pepper. Brush the crust lightly with olive oil for added crispness.

Bake in preheated oven for 12 to 15 minutes, or until the crust is golden and the cheese is bubbling.

Remove from oven and allow to cool slightly. Slice into 16 even pieces using a sharp pizza cutter and serve warm.
