Pizza Quesadillas with Pepperoni (Printable Version)

# What You'll Need:

01 - 1 teaspoon olive oil
02 - 1/4 cup diced onions
03 - 1/2 cup diced bell peppers
04 - 1/2 teaspoon Italian seasoning
05 - 1/2 teaspoon dried basil
06 - Salt to taste
07 - Black pepper to taste
08 - 8 tortillas, 20 cm diameter
09 - 1 cup marinara or pizza sauce
10 - 1 cup grated mozzarella cheese
11 - 16–24 slices pepperoni

# Steps To Follow:

01 - Heat olive oil in a large non-stick skillet over medium-high heat. Add diced onions and bell peppers, then sprinkle in Italian seasoning, dried basil, salt, and black pepper. Sauté, stirring occasionally, for 3–4 minutes until vegetables are softened. Transfer to a bowl and set aside.
02 - Lay out four tortillas. Spread marinara or pizza sauce evenly over each. Distribute the cooked vegetables, pepperoni slices, and grated mozzarella cheese over the sauce. Top each with the remaining tortillas, pressing gently to seal.
03 - Return the skillet to medium heat. Carefully place each assembled quesadilla into the pan. Cook for 2–3 minutes per side until golden brown and cheese has melted. Repeat with remaining quesadillas. Slice and serve warm.
