Peach Soba Harmony Salad (Printable Version)

# What You'll Need:

→ Noodles

01 - 200 g dried soba noodles

→ Produce

02 - 2 ripe peaches, halved and pitted
03 - 2 cups shredded purple cabbage
04 - 2 scallions, thinly sliced
05 - 1 small cucumber, julienned
06 - 1 small carrot, julienned
07 - 1 tablespoon fresh cilantro, chopped

→ Dressing

08 - 2 tablespoons fresh lime juice
09 - 1 tablespoon rice vinegar
10 - 1 tablespoon soy sauce
11 - 1 tablespoon honey or maple syrup
12 - 1 tablespoon fresh ginger, finely grated
13 - 1 small garlic clove, minced
14 - 3 tablespoons neutral oil such as grapeseed or sunflower
15 - 1 teaspoon toasted sesame oil
16 - Freshly ground black pepper, to taste

→ Garnish

17 - 2 tablespoons toasted sesame seeds
18 - 1 teaspoon chili flakes

# Steps To Follow:

01 - Cook soba noodles in boiling water following package instructions. Drain well and rinse under cold water until completely cool.
02 - Preheat a grill pan or outdoor grill to medium-high. Lightly brush peach halves with neutral oil and grill for 1–2 minutes per side until lightly charred. Allow to cool, then slice into wedges.
03 - In a large mixing bowl, combine cooled soba noodles, shredded purple cabbage, cucumber, carrot, and scallions.
04 - In a separate bowl, whisk together lime juice, rice vinegar, soy sauce, honey or maple syrup, grated ginger, minced garlic, neutral oil, toasted sesame oil, and black pepper until emulsified.
05 - Pour the prepared dressing over the noodles and vegetables. Toss thoroughly to coat all components evenly.
06 - Gently fold in grilled peach wedges and chopped cilantro. Transfer mixture to serving bowls or a platter.
07 - Sprinkle with toasted sesame seeds and chili flakes to taste. Serve immediately or chill for up to 2 hours for enhanced flavor.

01 - Replace honey with maple syrup for a fully plant-based preparation.
02 - Nectarines are an excellent substitute for peaches when in season.
