→ For Garnish

20 - Fresh chopped parsley
21 - Lemon wedges
22 - Olive oil drizzle

# Steps To Follow:

01 - In a large bowl, combine ground lamb with onion, garlic, herbs, and spices. Mix well until fully combined (but don't overwork the meat). Divide the mixture into 8–10 portions and shape into oval or sausage-like koftas around skewers (or simply shape by hand if no skewers).
02 - Preheat a grill or grill pan over medium-high heat. Lightly brush the koftas with olive oil. Grill for 3–4 minutes per side, turning until nicely browned and cooked through with slightly charred edges.
03 - In a bowl, mix yogurt, cucumber, garlic, lemon juice, mint, parsley, and a pinch of salt. Chill for 15 minutes to let flavors meld.
04 - Arrange the grilled lamb koftas on a clean ceramic platter. Serve with a small bowl of yogurt sauce in the corner. Garnish with chopped parsley, lemon wedges, and a light drizzle of olive oil.

# Notes and Tips:

01 - For extra richness, mix in a tablespoon of olive oil or tahini into the yogurt sauce.
02 - These koftas also cook well in a cast-iron skillet if you don't have a grill.
03 - Add a pinch of chili flakes if you like a spicy edge.
