Rinse and pat dry the shrimp. In a medium bowl, whisk together olive oil or melted butter, garlic, lemon zest, lemon juice, paprika or chili flakes (if using), salt, and black pepper. Add the shrimp and toss to coat evenly. Allow to marinate for 10 to 15 minutes to enhance flavor, if desired.

Preheat grill, grill pan, or cast iron skillet over medium-high heat. Arrange marinated shrimp in a single layer. Grill for 2 to 3 minutes per side until pink, slightly charred, with crispy edges and golden shells bearing grill marks.

Transfer grilled shrimp to a warmed plate. Brush with any remaining melted butter or reserved marinade for extra gloss and richness. Generously garnish with chopped herbs and serve immediately with lemon wedges.
