Warm the tortillas briefly in a skillet or microwave until soft and pliable.

Spread a thin layer of mayonnaise or garlic sauce along the center of each tortilla. Evenly distribute grilled meat, shredded cheese, tomato slices, pickles, and optional onion. Fold sides over the filling, then roll tightly from the bottom up to secure.

Preheat a grill pan or sandwich press over medium-high heat. Brush the outside of each wrap lightly with olive oil. Grill each wrap for 2 to 3 minutes per side, gently pressing, until golden with distinct grill marks and the cheese is melted.
