In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the marinade all over the lamb chops. Let them sit at room temperature for 20-30 minutes (or refrigerate up to 4 hours, then bring to room temperature before grilling).

Preheat grill or grill pan to high heat. Grill lamb chops for 3-4 minutes per side for medium-rare, or longer to desired doneness. Let rest for 5 minutes before serving.

Plate the lamb chops with a sprinkle of sea salt and a lemon wedge on the side. Optionally garnish with a sprig of rosemary or parsley.
