04 - Egg wash (1 egg combined with 15 ml milk)

11 - Fresh croissants, halved and lightly toasted

# Steps To Follow:

01 - Lay out croissant dough triangles. Spread 1 teaspoon of apricot jam on each. Sprinkle pistachios over the jam if desired. Roll and shape croissants.
02 - Allow shaped croissants to proof until doubled in size. Brush surfaces with egg wash and scatter chopped pistachios on top.
03 - Bake at 190°C until golden, puffed, and fully cooked, following specified dough instructions.
04 - Brush day-old croissants with warmed simple syrup for moisture and shine. Slice partway open.
05 - Fill croissants with warmed apricot jam, pistachio paste, or mascarpone as preferred. Drizzle extra jam on top. Sprinkle with toasted pistachios and finish with powdered sugar or glaze if desired.
06 - Place filled croissants in a 160°C oven for approximately 5 minutes to lightly warm before serving.
07 - Split croissants lengthwise and toast until just crisp. Spread warm apricot compote on each half.
08 - Pipe or spoon pistachio cream or whipped mascarpone onto the compote. Garnish with whole and crushed pistachios, plus micro herbs, edible flowers, or a drizzle of honey or rosewater syrup if desired.
