Set oven temperature to 220°C and allow to preheat.

Inspect potatoes and halve any larger ones to ensure uniform size for roasting. Place all potatoes in a large mixing bowl.

Drizzle potatoes with olive oil. Add garlic powder, paprika, dried rosemary or thyme, salt, and black pepper. Toss thoroughly to coat each piece evenly with oil and seasonings.

Spread seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Place in the oven and roast for 30–40 minutes, turning the potatoes once halfway through, until golden, crisp on the surface, and fork-tender within.

If desired, sprinkle hot roasted potatoes with grated parmesan. Garnish with fresh parsley or chives before serving.
