# What You'll Need:

01 - 700g small potatoes, washed and dried (baby potatoes or new potatoes)

→ Oils and Fats

02 - 2 tablespoons olive oil

→ Seasonings

03 - 1 teaspoon garlic powder
04 - 1 teaspoon smoked paprika or regular paprika
05 - 1 teaspoon dried rosemary or thyme
06 - 0.5 teaspoon salt
07 - 0.25 teaspoon black pepper

→ Optional Additions

08 - 1 tablespoon grated parmesan cheese
09 - Fresh parsley or chives, finely chopped, for garnish

# Steps To Follow:

01 - Set oven temperature to 220°C and allow to preheat.
02 - Inspect potatoes and halve any larger ones to ensure uniform size for roasting. Place all potatoes in a large mixing bowl.
03 - Drizzle potatoes with olive oil. Add garlic powder, paprika, dried rosemary or thyme, salt, and black pepper. Toss thoroughly to coat each piece evenly with oil and seasonings.
04 - Spread seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Place in the oven and roast for 30–40 minutes, turning the potatoes once halfway through, until golden, crisp on the surface, and fork-tender within.
05 - If desired, sprinkle hot roasted potatoes with grated parmesan. Garnish with fresh parsley or chives before serving.
