01 - 4 chicken thighs, bone-in, skin-on
02 - 600 g yellow potatoes, halved or quartered

03 - 2 tablespoons olive oil
04 - 4 garlic cloves, crushed
05 - 1 teaspoon smoked paprika
06 - 1 teaspoon dried mixed herbs
07 - Salt and freshly ground black pepper, to taste

08 - 2 tablespoons fresh parsley, finely chopped

# Steps To Follow:

01 - Preheat oven to 200°C. Pat chicken thighs dry with paper towel. Halve or quarter the potatoes as needed.
02 - Combine the potatoes in a baking dish with crushed garlic, olive oil, smoked paprika, dried herbs, salt, and pepper. Toss well to evenly coat.
03 - Generously season chicken thighs with salt and pepper. Nestle them among the potatoes in an even layer, skin side up.
04 - Bake for 45 minutes, or until the chicken skin is golden and crisp and potatoes are tender when pierced with a fork.
05 - Garnish with fresh chopped parsley and squeeze over lemon juice if desired. Serve immediately.
