Steam or boil cauliflower florets for 5 to 7 minutes until just tender. Drain thoroughly and pat dry for best texture.

In a large bowl, mix shredded chicken, buffalo sauce, ranch or blue cheese dressing, half of the cheddar, and half of the mozzarella. Season with salt and pepper.

Add cooked cauliflower to the chicken mixture and gently toss to coat all ingredients evenly.

Transfer the combined mixture into the prepared baking dish, smoothing into an even layer. Top with remaining cheddar and mozzarella cheese.
