# What You'll Need:

01 - 2 cod fillets, fresh or thawed, skin removed
02 - 1 large carrot, diced
03 - 1 small leek, thinly sliced (white and light green parts only)
04 - 120 g cooked white rice or short-grain rice

→ Broth & Seasoning

05 - 1 litre vegetable broth, low sodium if preferred
06 - 1 tablespoon olive oil or unsalted butter
07 - 1 bay leaf
08 - Salt, to taste
09 - Freshly ground black pepper, to taste

→ Garnish & Optional

10 - Fresh herbs (parsley, dill, or chives), finely chopped
11 - Lemon wedges, for serving (optional)

# Steps To Follow:

01 - Heat olive oil or butter in a medium saucepan over medium heat. Add diced carrot and sliced leek, sauté for 3 to 4 minutes until vegetables are beginning to soften without taking on colour.
02 - Pour in vegetable broth and add the bay leaf. Increase heat to bring to a gentle boil, then reduce to a simmer for 10 minutes until carrots are tender.
03 - Place cod fillets gently into the simmering broth. Cover and cook for 5 to 7 minutes until fish is opaque and flakes easily with a fork.
04 - Stir in cooked rice and simmer for an additional 2 to 3 minutes to thoroughly warm through. Adjust seasoning with salt and pepper to taste.
05 - Carefully break the cooked cod into large flakes. Ladle hot broth, vegetables, rice, and cod into warmed bowls. Top with fresh herbs and serve alongside lemon wedges if desired.
