Chipotle Ranch Grilled Chicken Burrito (Printable Version)

# What You'll Need:

→ Chicken Marinade

01 - 2 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 2 tablespoons freshly squeezed lime juice
04 - 1 tablespoon chipotle chili powder
05 - 1 teaspoon smoked paprika
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon ground cumin
09 - Salt to taste
10 - Black pepper to taste

→ Burrito Assembly

11 - 4 large flour tortillas
12 - 240 grams cooked white or brown rice
13 - 165 grams black beans, drained and rinsed
14 - 115 grams shredded cheddar or Monterey Jack cheese
15 - 70 grams shredded lettuce
16 - 80 grams diced tomatoes
17 - 80 grams corn kernels (optional)
18 - 10 grams chopped fresh cilantro (optional)
19 - 120 millilitres chipotle ranch dressing

# Steps To Follow:

01 - In a mixing bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Add the chicken breasts and turn to coat evenly. Cover and refrigerate for a minimum of 20 minutes or up to 2 hours for enhanced flavor.
02 - Preheat a grill or grill pan to medium-high heat. Cook the marinated chicken breasts for 6–8 minutes per side, or until they reach an internal temperature of 74°C. Remove from heat and let rest for 5 minutes. Slice the chicken into thin strips.
03 - Warm the flour tortillas in a dry skillet or microwave until pliable. Heat the black beans and cooked rice until hot, if prepared in advance.
04 - Lay each tortilla flat and spread 1–2 tablespoons of chipotle ranch dressing in the centre. Layer with rice, black beans, grilled chicken strips, shredded cheese, lettuce, diced tomatoes, and corn if using. Sprinkle with chopped cilantro if desired.
05 - Fold both sides of the tortilla inward and roll tightly from the bottom to enclose the filling. Serve immediately, or grill the wrapped burritos for a crisp exterior if preferred.
