Preheat oven to 180°C (fan 160°C). Line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a stand mixer with paddle attachment, beat butter, granulated sugar, and powdered sugar at high speed for 4 minutes until light and fluffy.

Add egg, egg yolk, and vanilla extract to the mixture. Mix thoroughly until combined.

Gradually add the flour mixture in 2–3 batches, mixing after each addition until a smooth dough forms.

Transfer dough to a piping bag fitted with a large open star tip. Pipe desired shapes onto prepared sheets.

If using jam or candied cherries, gently press the centre of each round cookie to create a small indentation.

Bake for 8–10 minutes or until edges are lightly golden.

Allow cookies to cool on tray for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, decorate with melted chocolate, sprinkles, chopped nuts, or assemble with jam as desired.
