Set oven to 190°C. Line a baking tray with parchment paper.

Roll out puff pastry on a lightly floured surface. Cut into 6 even triangles.

Place a slice of ham and a slice of cheese on the wide end of each triangle. Roll each triangle from the wide end toward the tip, forming a croissant shape. Position on the prepared tray with the tip underneath.

Beat the egg with 1 teaspoon milk. Brush over each croissant. Sprinkle with chia or poppy seeds if desired.

Bake for 18 to 22 minutes or until croissants are puffed and deeply golden. Remove from oven and let cool slightly. Garnish with chopped parsley if preferred.
