# Steps To Follow:

01 - Add rolled oats, cottage cheese, ripe banana, eggs, baking powder, vanilla extract, and salt into a blender. Blend on high until completely smooth. Allow batter to rest for 1-2 minutes to thicken for optimal fluffiness.
02 - Preheat a non-stick skillet over medium heat. Lightly coat with butter or cooking spray. Pour approximately 60ml (1/4 cup) of batter for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
03 - Stack pancakes on a plate and garnish with your preferred toppings such as fresh fruit, yogurt, or a drizzle of maple syrup.

01 - Use bananas with brown spots for sweeter pancakes.
02 - Experiment with add-ins like cinnamon, chocolate chips, or nuts for flavor variations.
03 - Store leftovers in an airtight container in the refrigerator for up to 3 days.
04 - For longer storage, freeze pancakes with parchment paper between each layer for up to a month.
